Kitchen Basics
The Tools of Creation: Basic Knives Skills and Cooking the Classics
No need to fear your tools—they are the instruments of creation. In this class, you’ll learn how to safely use a knife—the first step to better cooking. Then, you will use your newfound skills to create a quick meal to eat with your family: beans and vegetable stew with season-fresh veggies and steamed brown rice.
Easy, Fresh Pasta and Sauces
Learn the basics of making a variety of pasta dough from scratch: spinach, tomato, and whole wheat. You’ll even create pasta shapes, including pappardelle, fettuccini, and ravioli filled with seasonal vegetables, as well as basic tomato sauce and vegan cream sauce.
All about Winter Squashes
During fall and winter, squashes are one of the most nutritious foods available, rich in antioxidants, vitamins, and minerals. They also offer a very good source of vitamins B1 and C, folic acid, pantothenic acid, fiber, and potassium. Marita helps you create Wild Rice and Pumpkin Stew with Cremini Mushrooms, Butter Cup and Potato Stew with Corn, Aji Amarillo Pepper, and Soft Polenta with Roasted Butternut Squash Tomato Ragout.
Vegetarian with a Latin Flair
Learn the basics of the Latin Flavors and what gives them a great Sazon (seasoning)! This class features some of the simplest, yet delicious dishes: Dried Potato Stew with Aji Panca Pepper, Quinoa Salad with Roasted Seasonal Vegetables, Tacu Tacu (beans and rice cake topped with plantains and pickled onions), and Mushroom and Artichoke Ceviche.

Enjoy a one-of-a-kind session where you’ll explore the craft of delicious soups: Vegan Butternut Squash, Cauliflower Soup, Spicy Carrot Soup, and Vegetable Minestrone.

Taste of Peru
Because Peruvian cuisine is a melting pot of so many flavors and influences, this session will also make you an expert in the Asian technique of stir-fry when you learn how to make Lomo Saltado. Discover how to make the national dish of Peru: Ceviche. Marita’s specialty dishes Aji de Gallina and Potato Causa are on the menu, too! Vegetarian substitutions are also available upon request.
Health Nut: Nutritious Drinks and Gluten-Free Fare
Vegan Dinner Party
This session is all about healing juices that maintain a healthy body. Learn to make Quinoa Water (a nutritious drink that can be mixed with any meal), Chicha Morada (purple corn drink with fresh fruits), Emoliente (herbal drink with lignans), and Papaya Batido with Coconut Milk. Also, you’ll create dishes that are strictly gluten free: Braised Kale with Sesame Seeds, Classic Tabuleh Salad with Lemon Vinaigrette, Kidney Bean Burgers, and Rosemary Scented Roasted Potatoes.
Prepare a variety of vegan hors d’oeuvres, and become an expert in entertaining family and friends by adding a little Peruvian Flair! You’ll learn to make Quinoa Mini-Cakes with Tomato Avocado Salsa, Red Lentil Pate with Pita Chips, Vegetarian Summer Rolls with Spicy Soy and Ginger Dip, Truffle-Scented Risotto on Phyllo Dough, Tiny Roasted Potatoes with Roasted Red Pepper Rouille, Thai Noodle Rostis with Avocado, and Homemade Roasted Garlic Hummus.
